Make Lucy’s Lemon Squares…
I don’t know why Spring always makes me think of Lemons…or is it vice versa?
I have always loved this dessert since I was a kid. The first time I made it was from a recipe from a kid’s cook book called, “PEANUTS COOK BOOK”.
Sift 1 Cup of flour and 1/4 Cup of Powdered Sugar together. With clean hands blend into the flour/sugar mix, 1/2 Cup room temperature softened butter until well mixed. Pat evenly into the bottom of a 8 x 8 inch baking pan. Bake for 20 minutes at 350.
Meanwhile, beat together 2 eggs, 1 Cup granulated sugar, 1/2 teaspoon baking POWDER, 2 1/2 Tablespoons FRESH lemon juice, and a dash of salt. Pour this over baked crust and return to oven for 20 minutes at 350.
Remove from the oven and let cool at least an hour on a rack. As you see I doubled the recipe and poured it into a round tart dish. When cooled, sift powdered sugar on top.
