Make LEMON CAKE!
Preheat oven to 350. Grease and sugar a bundt pan. Make sure to grease and sugar the center post well as that is where it tends to stick.
Combine 1 Duncan Hines Moist Deluxe Lemon Supreme Cake Mix, 1 -3.4oz box Lemon Instant Pudding, 4 eggs, 1/2 Cup vegetable oil, 3/4 Cup water, and 1/4 Cup fresh squeezed lemon juice in a large bowl. Beat at low speed with electric mixer until moistened then beat at medium speed for 2 minutes.
Bake for 50 – 60 minutes or until a toothpick comes out clean. (I baked mine for 50 and it was just right). Cool in pan for 25 minutes then using a knife gently pry the cake away from the center post and sides. Invert onto a plate. Poke small holes in the top of the cake.
GLAZE: Combine in a bowl 1/4 Cup fresh squeezed lemon juice, 1 Tablespoon water, 1/2 teaspoon lemon extract and 3/4 Cup sugar. This will seem watery and sugary but the cake will soak it up. Gently spoon the glaze onto the cake. Make sure to get some on the inner ring as well as the outer area.
