Remember the “8″ ball squash from the Farmer’s Market?
Traditionally you might stuff them but we decided to try something different so we sliced them, placed them on an oiled sheet of foil over a cookie sheet, lightly brushed butter on the top side, then dusted them with fresh ground salt & pepper. Next we crushed up Ritz crackers into a bowl and grated in some parmesean cheese and tossed this together. We topped each “round” with the cracker/cheese mixture and ran it under a broiler until browned.
